August Homestead Happenings
  • Happy August! This past month was a busy and exciting one. We came home with three pigs on July 4th, and a few days later, purchased two lambs to raise for meat. It feels so good to once again be able to raise meat for our family and community. 
  • How is your fall garden coming along? With extreme heat and torrential rains, my seedlings have suffered, but I will certainly have a modest crop of beets, carrots, kale, and chard for harvest this fall. This weekend I'm re-sowing chard, beets, and carrots, and will direct sow parsnips, turnips, and rutabaga. Later in August I'll seed lettuce, some more kale, and spinach. 
  • Peaches are in stock at all the local country stores! We buy them by the bushel, eat lots fresh, can some in light syrup, and enjoy this amazing peach basil salsa, and other favorite recipes
  • Have you ever tried Zacusca? It is a delicious eggplant, pepper and tomato recipe that makes a great dip or spread. It's also a wonderful way to preserve eggplant for winter. You can find my recipe here.
  • Summer means adventuring! We love camping, and our kids do too.  If you have a long car vacation coming up, here are some ideas for making a camping road trip with your kids as fun as possible! 
Summer meals on our homestead are delicious, but very simple It's just too hot to cook indoors, so we rely on our SunOven for baked dishes, cook in the outdoor kitchen as much as possible, and thrive on fresh salads, salsas, and garden-fresh veggie dishes. One of my favorite side dishes is a Summer Kale Salad. I'll be sharing the recipe in the upcoming eCourse, Empowered Eating!
